  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • Salt and pepper to taste (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Peel and dice the sweet potatoes into roughly ½-inch cubes. Mince the garlic finely. Measure out your olive oil and cumin.
  2. Place your skillet over medium heat and add 1 tablespoon of olive oil. Let it warm until shimmering but not smoking.
  3. Add the diced sweet potatoes to the skillet, stirring occasionally. Cook until they start to soften and get a slight golden color. If they begin sticking, add a splash of water and cover for a minute to steam them gently. You want them tender but not mushy.
  4. Push potatoes to the side; add the remaining olive oil and the ground turkey to the empty side of the pan. Break it up with your spatula and cook until browned and cooked through, about 6-8 minutes. It should be no longer pink and have a nice sear.
  5. Stir in the minced garlic and ground cumin. Cook for another minute until fragrant—don’t let the garlic burn or it’ll get bitter.
  6. Mix the sweet potatoes and turkey together, season with salt and pepper to taste. Give everything a good stir to blend flavors evenly.
  7. Optional: Sprinkle with fresh parsley before serving for a pop of color and freshness.

Notes

Avoid overcrowding the pan when browning the turkey to ensure a good sear. If sweet potatoes take longer to cook, cover the pan briefly to trap steam. Add garlic only after the turkey is nearly cooked to prevent bitterness. Taste and adjust seasoning at the end. Optional variations include adding chili powder for heat or substituting tofu for a vegetarian version.
