Best Easy Kid-Approved Cranberry Brie Bites

These cranberry brie bites in puff pastry are the perfect appetizer for any gathering. With just four main ingredients and under 30 minutes, they deliver flaky, gooey, sweet-tart goodness that everyone loves.

  • 1 package frozen puff pastry sheets (17.3 oz / 490g), thawed
  • 1 wheel brie cheese (8 oz / 225g), cold
  • 1/2 cup (120ml) whole berry cranberry sauce
  • 1 large egg, beaten with 1 tablespoon water
  • Fresh rosemary or thyme for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Lightly flour your work surface. Unfold one sheet of thawed puff pastry and gently roll it out just enough to smooth the creases.
  3. Cut the puff pastry into 9 equal squares (3×3 grid). Repeat with the second sheet to get 18 squares total.
  4. Gently press each square into the cups of a mini muffin tin, or place on the parchment-lined baking sheet and pinch up the edges slightly to form a little cup shape.
  5. Cut the cold brie into small cubes, about 1/2 inch each, leaving the rind on.
  6. Place one brie cube in each pastry cup.
  7. Spoon about 1 teaspoon of cranberry sauce over each brie cube.
  8. Brush the edges of each pastry square with egg wash.
  9. Bake for 12-15 minutes, until the pastry is puffed and golden brown and the brie is melted and bubbly.
  10. Let cool in the pan for 5 minutes before removing.
  11. Garnish with fresh rosemary or thyme if desired, and serve warm.

Notes

Keep ingredients cold for best results. Don’t overfill cups to avoid soggy bottoms. Let rest 5 minutes before serving to prevent burns. Can be assembled up to 4 hours in advance and refrigerated. Freeze unbaked for up to 3 months.
