  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup (60g) powdered sugar
  • 12 tablespoons milk or heavy cream
  • 1/4 teaspoon vanilla extract
  • White gel frosting or store-bought white icing pen
  • Optional: chocolate jimmies or small candy pieces

Instructions

  1. Preheat oven to 350°F (175°C). Generously spray a mini muffin pan with nonstick cooking spray.
  2. In a large microwave-safe bowl, melt the butter in 30-second bursts until just melted. Let cool for 2-3 minutes.
  3. Add the granulated sugar to the melted butter and whisk until combined. Add the eggs one at a time, whisking well after each. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder.
  5. Pour the dry ingredients into the wet mixture and fold with a rubber spatula until just combined. Do not overmix.
