  • 10 cups water (for baking soda bath)
  • ⅔ cup baking soda
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)

  • 2 tablespoons all-purpose flour (for beer cheese dip)
  • 1 cup whole milk
  • ½ cup beer (lager or pilsner)
  • 2 cups sharp cheddar cheese, shredded
  • ½ teaspoon Dijon mustard
  • ¼ teaspoon garlic powder
  • Pinch of cayenne pepper (optional)
  • Salt and black pepper, to taste

Instructions

  1. In a large mixing bowl, combine warm water, sugar, and active dry yeast. Let sit for about 5 minutes until foamy.
  2. Add melted butter, salt, and 3 ½ cups flour to the yeast mixture. Stir until a shaggy dough forms. If too sticky, add remaining ½ cup flour a tablespoon at a time. Knead in the bowl for about 3 minutes until smooth and elastic.
  3. Turn dough onto a lightly floured surface. Divide into 4 equal pieces. Roll each piece into a 12-inch rope. Cut each rope into 1-inch pieces.
  4. Preheat oven to 425°F. Bring 10 cups water to a boil in a large pot. Carefully add baking soda. Reduce heat to a gentle simmer.
  5. Working in batches, drop 10-12 pretzel bites into simmering baking soda water. Cook for 30 seconds, flip, and cook another 30 seconds. Transfer to a parchment-lined baking sheet, spacing 1 inch apart.
  6. Brush each pretzel bite with egg wash. Sprinkle generously with coarse sea salt or pretzel salt.
  7. Bake for 12-15 minutes until deep golden brown, rotating the baking sheet halfway through.
  8. While pretzels bake, make the beer cheese dip: Melt butter in a small saucepan over medium heat. Whisk in flour and cook for 1 minute. Slowly pour in milk and beer, whisking continuously. Cook for 3-4 minutes until thickened. Reduce heat to low, add shredded cheddar, Dijon mustard, garlic powder, and cayenne. Stir until smooth. Season with salt and pepper. Keep warm over low heat.
