Instructions

  1. Preheat oven to 400°F (200°C). Poke deep slits all over the whole butternut squash. Place on a parchment-lined baking sheet and roast for 45-60 minutes until a knife slides in easily. Let cool, then halve, scoop out seeds, and scrape out flesh. Set aside.
  2. In a large soup pot over medium heat, melt the butter. Cook, swirling occasionally, until it foams and brown specks appear (about 3-4 minutes). Immediately add sage leaves; fry for 15 seconds until crispy. Remove sage with a slotted spoon and set aside.
  3. Add diced onion to the pot with the brown butter. Cook for 5-6 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add the roasted squash flesh, vegetable broth, and maple syrup. Stir, bring to a gentle boil, then reduce heat to low, cover, and simmer for 10 minutes.

  6. Stir in coconut milk. Season with salt and pepper to taste.
