  • 3 tablespoons unsalted butter (for sautéing onions and adding richness)
  • 4 boneless, skinless chicken breasts
  • 2 cups beef broth
  • 2 teaspoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • Salt and freshly ground black pepper, to taste
  • 6 ounces Swiss cheese, sliced or shredded
  • 8 ounces egg noodles
  • 3 tablespoons unsalted butter (for buttering noodles)
  • 1/4 cup chopped fresh parsley (optional)
  • Salt, to taste

Instructions

  1. Heat 3 tablespoons of butter in a large skillet over medium-low heat. Add the thinly sliced onions and a pinch of salt. Cook slowly, stirring occasionally, until deep golden brown and caramelized, about 30-40 minutes.
  2. Transfer the caramelized onions to the bottom of the crockpot. Add minced garlic, Worcestershire sauce, dried thyme, salt, and pepper. Pour in the beef broth and stir to combine.
  3. Nestle the chicken breasts into the onion mixture, pressing them gently down so they’re partially submerged in the broth.
  4. Cover and cook on low for about 6 hours (or high for 3-4 hours) until chicken is tender and fully cooked.
  5. About 20 minutes before serving, layer Swiss cheese slices over each chicken breast. Cover again and let the cheese melt.
  6. While the cheese melts, bring a large pot of salted water to a boil. Cook egg noodles according to package instructions (7-9 minutes) until al dente. Drain well.
  7. Toss hot noodles with 3 tablespoons butter and chopped parsley (if using). Season lightly with salt.
  8. Serve chicken breasts topped with caramelized onion sauce alongside buttered noodles.

Notes

Keep slow cooker lid sealed during cooking to trap steam and develop flavors. If onions cook too fast or burn, reduce heat and add a splash of water. Remove lid during last hour if liquid is too watery to thicken sauce. For dairy-free version, substitute butter with olive oil and use dairy-free cheese or omit cheese. For gluten-free, use gluten-free noodles or spiralized vegetables.
