  • 1 cup packed brown sugar
  • 2 tablespoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • 2 cups confectioners’ sugar (for glaze)
  • 34 tablespoons heavy cream or extra eggnog
  • ½ teaspoon ground nutmeg (for glaze)
  • 1 teaspoon vanilla extract (for glaze)

Instructions

  1. In a large bowl, combine warm milk, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. Add eggnog, softened butter, eggs, and vanilla to the yeast mixture. Gradually add flour and salt, mixing until a shaggy dough forms.
  3. Knead on medium speed for 5-7 minutes until smooth and elastic (or by hand until smooth).
  4. Place dough in a lightly oiled bowl, cover, and let rise in a warm place for 1-1.5 hours until doubled in size.
  5. While dough rises, mix melted butter, granulated sugar, brown sugar, cinnamon, nutmeg, and cloves in a small bowl.
  6. Punch down risen dough and turn out onto a floured surface. Roll into a 12×18 inch rectangle.
  7. Spread the butter mixture evenly over the dough, leaving a small border. Roll tightly from the long side into a log.
  8. Cut into 12 equal slices using dental floss or a sharp knife.
  9. Place slices in a greased 9×13 inch baking dish, cover, and let rise again for 30-45 minutes until puffy.
  10. Preheat oven to 350°F (175°C). Bake for 25-30 minutes until golden brown.
  11. Whisk together confectioners’ sugar, heavy cream, nutmeg, and vanilla until smooth.
  12. Drizzle glaze over warm rolls before serving.

Notes

Ensure milk is not too hot (around 110°F) to avoid killing the yeast. Do not skip the second rise for fluffy rolls. If your kitchen is cold, rise dough in a turned-off oven with the light on. For make-ahead, assemble rolls the night before, refrigerate, and let come to room temperature before baking.
