A giant, skillet-baked chocolate chip cookie cake that’s soft in the center, crisp at the edges, and perfect for Thanksgiving. It’s a fun, crowd-pleasing dessert that breaks up the pie lineup and brings pure joy to the holiday table.

  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar, packed
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 2 and 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • Flaky sea salt for sprinkling (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. If using a cast iron skillet, place it in the oven while it preheats.
  2. In a large mixing bowl, beat the softened butter, granulated sugar, and packed brown sugar together on medium speed for about 2-3 minutes, until light, fluffy, and pale in color. Scrape down the sides and bottom of the bowl at least once.
  3. Beat in the eggs one at a time, mixing well after each addition. Then add the vanilla extract and mix until just combined.
  4. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding gently with a spatula. Mix just until no streaks of flour remain.
  6. Gently fold in 1 and 3/4 cups of the chocolate chips, reserving about 1/4 cup for the top.
  7. Carefully remove the preheated skillet from the oven (use oven mitts!). Lightly grease it with a little butter or nonstick spray. Press the cookie dough evenly into the skillet, spreading it all the way to the edges. Press the reserved chocolate chips into the top of the dough.
  8. Bake for 20-25 minutes. The edges should be golden brown and set, while the center will still look slightly soft and underdone.
  9. Let the cookie cake cool in the skillet on a wire rack for at least 15 minutes.
  10. Optional: Sprinkle with a pinch of flaky sea salt right when it comes out of the oven. Dust with powdered sugar just before serving. Slice into wedges like a pizza.

Notes

For a gooey center, bake closer to 20 minutes. For a more set cookie cake, go to 25 minutes. Letting it cool properly is key to clean slices. Toasting the chocolate chips for 5 minutes before adding deepens the flavor. Room temperature ingredients are crucial for best texture.
