Cozy Homemade Pumpkin Spice Cold Brew Concentrate (Easy Recipe)

This easy pumpkin spice cold brew concentrate uses real pumpkin puree and whole spices for a velvety, smooth, and naturally sweet fall coffee drink. It comes together in just 5 minutes of active prep and steeps in the fridge for a cozy, make-ahead treat.

  • 1 cup (120g) coarsely ground coffee beans
  • 4 cups (960ml) cold, filtered water
  • 3 tablespoons (45g) pumpkin puree (100% pure, not pie filling)
  • 2 tablespoons (30ml) maple syrup
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ⅛ teaspoon ground allspice (optional)
  • Pinch of salt

Instructions

  1. Grind your coffee beans to a coarse consistency (like breadcrumbs).
  2. In a large mason jar or pitcher, combine the coarsely ground coffee, cinnamon, nutmeg, ginger, cloves, allspice (if using), and salt. Stir to distribute.
  3. Add the pumpkin puree and maple syrup to the jar.
  4. Pour in the cold, filtered water and stir vigorously for about 30 seconds until the pumpkin puree is mostly dissolved and the coffee grounds are fully saturated.
  5. Cover the jar and refrigerate for 18 to 24 hours (20 hours is ideal).
  6. After steeping, line a fine-mesh strainer with cheesecloth or a nut milk bag and place it over a large bowl or clean jar. Slowly pour the cold brew mixture through the strainer. Let it drip naturally, then gently press on the solids with a spatula to extract more liquid. Do not squeeze too hard.
  7. Transfer the strained cold brew concentrate to a clean, sealable bottle or jar. Store in the refrigerator for up to 2 weeks.
  8. To serve, fill a glass with ice, pour the concentrate halfway, and top with water, milk, or non-dairy milk. Stir and enjoy.

Notes

For a super clean cold brew, strain twice (first through a fine-mesh strainer, then through a coffee filter or cheesecloth). The flavor mellows and becomes smoother after a day or two in the fridge. Adjust sweetness to taste by adding more or less maple syrup.
