  • 1 cup vanilla bean ice cream (about 2 generous scoops)
  • Optional: 2 tablespoons chopped toasted pecans

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Gently wash and halve 4 medium ripe peaches. Remove the pits carefully to keep the halves intact.
  3. In a small bowl, combine 3 tablespoons honey, 2 tablespoons melted unsalted butter, 1 teaspoon freshly squeezed lemon juice, and 1 teaspoon ground cinnamon. Stir until blended well.
  4. Place the peach halves cut side up in a medium-sized baking dish (about 8×8 inches), slightly spaced out.
  5. Use a spoon or pastry brush to generously coat each peach half with the honey cinnamon mixture.
  6. Bake in the oven for 20-25 minutes until peaches are tender but not mushy and the glaze bubbles and caramelizes slightly around the edges.
  7. If using toasted pecans, sprinkle them over the peaches during the last 5 minutes of baking to warm them through.
  8. Remove peaches from the oven and let cool for 2-3 minutes.
  9. Serve each peach half topped with a generous scoop of vanilla bean ice cream.
