  • 1 tablespoon (15ml) toasted sesame oil
  • 1 tablespoon (8g) cornstarch mixed with 2 tablespoons (30ml) cold water (slurry)
  • 2 tablespoons (30ml) olive oil
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)
  • Sliced green onions and toasted sesame seeds for garnish

Instructions

  1. Prep the Chicken: Pat the chicken thighs dry with paper towels. Season generously on both sides with salt and pepper. Let them sit at room temperature for about 10 minutes.
  2. Make the Sauce: In a small bowl, whisk together honey, soy sauce, minced garlic, chicken broth, and rice vinegar. In another small bowl, mix cornstarch with cold water to make a slurry.
  3. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Place chicken thighs skin-side down and cook without moving for 6-7 minutes until deep golden brown and crispy. Flip and cook for another 4-5 minutes. Chicken should be cooked through (internal temperature 165°F / 74°C).
  4. Remove the Chicken: Transfer seared chicken to a plate. Do not wipe out the skillet.
  5. Cook the Broccoli: Add broccoli florets to the same skillet. Cook over medium-high heat for 2-3 minutes, stirring occasionally, until charred spots appear.
  6. Add the Sauce: Pour the honey garlic sauce into the skillet with the broccoli. Stir to combine, scraping up browned bits. Bring to a simmer.
  7. Return the Chicken: Nestle chicken back into the skillet, skin-side up. Spoon sauce over tops. Cover with lid or foil, reduce heat to medium-low, and simmer for 8-10 minutes.
  8. Thicken the Sauce: Remove lid. Stir cornstarch slurry and drizzle into sauce while stirring. Simmer for 1-2 minutes until glossy and thickened.
  9. Finish and Serve: Drizzle with toasted sesame oil. Sprinkle with red pepper flakes if using. Garnish with green onions and sesame seeds. Serve immediately over steamed rice or noodles.
