Ingredients

Scale
  • 6 cups tart apples, peeled, cored, and sliced (Granny Smith or Honeycrisp recommended)
  • 1/4 cup pure maple syrup (Grade A preferred)
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 2 tablespoons all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, melted and slightly cooled
  • 2 tablespoons pure maple syrup
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the Apple Filling: Peel, core, and slice apples into 1/4-inch thick pieces. Toss with lemon juice, then add maple syrup, cinnamon, nutmeg, and flour. Stir gently to coat evenly.
  2. Make the Crisp Topping: In a separate bowl, mix oats, flour, nuts, brown sugar, cinnamon, and salt. Add melted butter and maple syrup, stirring until mixture clumps loosely. Adjust moisture if needed.
  3. Assemble and Bake: Preheat oven to 350°F (175°C). Spread apple mixture in a 9×13-inch baking dish. Evenly sprinkle topping over apples. Bake for 40-45 minutes until topping is golden and apples are bubbling. Cover with foil if topping browns too quickly.
  4. Prepare the Vanilla Ice Cream Topping: While baking, whisk heavy cream, milk, sugar, vanilla extract, and salt in a chilled bowl. Whip with electric mixer until soft peaks form. Alternatively, refrigerate and beat every 30 minutes for 3 hours for no-churn ice cream.
  5. Serve: Let crisp cool for 10 minutes. Serve warm with a dollop of vanilla ice cream topping. Store leftovers in airtight container in fridge up to 3 days.

Notes

Use lemon juice to keep apples bright and prevent browning. Melted butter helps the topping crisp up nicely. Cover with foil if topping browns too fast. Let crisp rest before serving to thicken juices. For gluten-free, substitute flour with gluten-free blend; for dairy-free, use coconut cream and coconut oil. Nuts in topping are optional but add crunch.
