  • 1 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper.
  2. In a large mixing bowl, peel and mash the ripe bananas with a fork until mostly smooth.
  3. Add the pumpkin puree, maple syrup, and eggs to the mashed bananas. Whisk until fully combined into a thick, orange-colored batter.
  4. In a separate small bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Pour the dry ingredients into the wet mixture. Gently fold together with a spatula until the flour just disappears; do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Tent with foil if the top browns too quickly.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas with black spots for maximum sweetness. Ensure eggs are at room temperature for better batter consistency. Do not overmix the batter to avoid a tough texture. The bread keeps well for 3 days at room temperature or can be frozen for up to 3 months.
