A reliable and delicious overnight breakfast bake featuring day-old brioche, tart Granny Smith apples, and a rich custard, perfect for busy mornings or weekend brunches.

  • 1 loaf brioche bread, cut into 1-inch cubes (day-old is best)
  • 4 tablespoons unsalted butter, melted
  • 3 large Granny Smith apples, peeled and diced
  • 2 teaspoons ground cinnamon
  • 1/4 cup granulated sugar
  • 2 tablespoons brown sugar
  • 1/2 cup chopped pecans (optional)
  • 4 large eggs, room temperature
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 teaspoons pure vanilla extract
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Cut brioche into 1-inch cubes. If fresh, toast cubes on a baking sheet for 5 minutes to dry them out. Toss warm cubes with melted butter in a large bowl.
  2. Peel and dice apples into pieces similar in size to the bread cubes. Set aside.
  3. In a large mixing bowl, whisk together eggs, milk, heavy cream, vanilla extract, nutmeg, salt, and granulated sugar until smooth and frothy.
  4. Spread half of the buttered bread cubes into a greased 9×13-inch baking dish. Sprinkle half of the diced apples over the bread. Repeat with remaining bread and apples.
  5. Pour the custard mixture evenly over the top. Use a spatula to gently press down on the bread to ensure all pieces are submerged.
  6. In a small bowl, mix brown sugar, cinnamon, and chopped pecans. (Optional: Rub in 1 tablespoon cold butter for a streusel texture).
  7. Cover the dish tightly with plastic wrap or foil and refrigerate for at least 4 hours, preferably overnight.
  8. Remove dish from refrigerator and let sit at room temperature for 20 minutes while oven preheats. Sprinkle the cinnamon-sugar topping evenly over the surface.
  9. Bake for 40-45 minutes until the top is golden brown and the custard is set (knife inserted in center comes out clean).
  10. Let cool for 10 minutes before serving to allow custard to set.

Notes

Use day-old brioche or toast fresh bread to prevent sogginess. Ensure all bread is submerged in custard for even cooking. Letting the bake sit at room temperature for 20 minutes before baking helps it cook more evenly. Leftovers can be refrigerated for up to 4 days or frozen for up to 2 months.
