This creamy, protein-packed overnight oats recipe recreates a beloved café bowl with the perfect balance of peanut butter, banana, and a protein punch. It’s a quick, make-ahead breakfast that feels like a cozy hug in a bowl.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk of choice (e.g., unsweetened almond milk)
  • 1/2 cup (120g) plain Greek yogurt
  • 1 medium ripe banana, mashed (about 120g)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 scoop (about 30g) vanilla protein powder
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • Pinch of salt
  • For topping (optional): 1/2 medium banana, sliced; 1 tablespoon (16g) peanut butter, warmed; 1 tablespoon (15g) dark chocolate chips; 1 tablespoon (8g) chopped peanuts; pinch of cinnamon

Instructions

  1. Mash the ripe banana in a small bowl with a fork until mostly smooth with a few tiny lumps.
  2. In your jar or container, combine the mashed banana, milk, Greek yogurt, and peanut butter. Whisk or stir until the peanut butter is fully incorporated.
  3. Add the rolled oats, protein powder, chia seeds, and a pinch of salt. If using sweetener, add it now. Stir until no dry patches of protein powder remain.
  4. Check the consistency: it should be pourable but not watery. Adjust with a splash more milk or a tablespoon more oats if needed.
  5. Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats well. If too thick, stir in a tablespoon of milk.
  7. Top with sliced banana, a drizzle of warm peanut butter, dark chocolate chips, chopped peanuts, and a sprinkle of cinnamon. Enjoy cold or warm.

Notes

For best texture, use rolled oats (not instant). Chia seeds are essential for thickness. Protein powder type matters: collagen peptides blend smoothest. Oats keep in fridge up to 5 days; freeze up to 3 months. Toppings should be added just before serving.
