Simple, fast, and nostalgic peanut butter and jelly cookie sandwiches that are perfect for cozy occasions and quick homemade treats.

  • 1 cup (240g) creamy peanut butter
  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • A pinch of salt
  • 1/2 cup (160g) grape jelly or your favorite jam
  • Optional: 2 tablespoons creamy peanut butter for spreading inside

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a mixing bowl, combine 1 cup creamy peanut butter and 1 cup granulated sugar. Mix until smooth and creamy, about 2 minutes.
  3. Add the egg, baking soda, vanilla extract, and salt. Beat until fully incorporated, about 1-2 minutes.
  4. Using a cookie scoop or tablespoon, drop dough balls about 1 inch apart on the baking sheet. Flatten each ball gently with a fork to create a crisscross pattern.
  5. Bake for 10-12 minutes until edges are firm but centers are still soft.
  6. Cool the cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  7. Spread about 1 teaspoon of grape jelly on the bottom side of one cookie, optionally add a thin layer of peanut butter on the other cookie, then press them together to form sandwiches.
  8. Serve immediately or store in an airtight container for up to 3 days. Refrigerate for longer storage.

Notes

Use creamy peanut butter for smoother dough. Do not overbake to keep chewy texture. Cool cookies completely before assembling to prevent jelly from melting. Warm jelly slightly if too thick for easier spreading. For nut-free version, substitute sunflower seed butter and seed-free jam. Can add cocoa powder for chocolate twist. Vegan option available using flax egg.
