  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan lightly with butter or non-stick spray and line with parchment paper.
  2. In a medium bowl, beat 8 oz softened cream cheese with 1/4 cup sugar until smooth. Add 1 egg yolk and 1/2 tsp vanilla extract, mix until combined. Chill in fridge.
  3. In a large bowl, mash 3 ripe bananas until mostly smooth with some chunks. Stir in 1 cup pumpkin puree, 1/2 cup melted butter, 3/4 cup granulated sugar, and 1/4 cup brown sugar.
  4. Beat in 2 large eggs one at a time until fully incorporated.
  5. In a separate bowl, whisk together 1 1/2 cups all-purpose flour, 1 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp salt, 1 tsp cinnamon, 1/2 tsp nutmeg, and 1/4 tsp cloves.
  6. Gradually fold the dry ingredients into the wet mixture with a spatula until just combined; do not overmix.
  7. Pour half the batter into the prepared loaf pan. Drop spoonfuls of the cream cheese mixture over the batter, then pour the remaining batter on top.
  8. Use a knife or skewer to gently swirl through the batter to create a marbled effect.
  9. Bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs. Tent with foil after 40 minutes if browning too quickly.
  10. Cool the bread in the pan on a wire rack for about 20 minutes before removing. Slice and serve warm or at room temperature.

Notes

Use ripe bananas for natural sweetness. Chill the cream cheese mixture to hold shape during baking. If batter is too thin, cream cheese swirl may sink. Tent with foil if top browns too quickly. For dairy-free, substitute butter with coconut oil and use dairy-free cream cheese. For gluten-free, use gluten-free flour blend.
