Ingredients

Scale
  • 1 bottle (750 ml) dry white wine, such as Sauvignon Blanc or Pinot Grigio
  • 2 cups (480 ml) apple cider, preferably unfiltered
  • 1/2 cup (120 ml) apple brandy or Calvados (optional)
  • 1/4 cup (60 ml) salted caramel sauce
  • 2 medium apples, thinly sliced (Honeycrisp or Fuji)
  • 1 large pear, thinly sliced (Bosc or Anjou)
  • 2 cinnamon sticks
  • 34 whole star anise (optional)
  • Fresh rosemary sprigs, for garnish
  • 1/4 cup (50 g) granulated sugar (for rim)
  • 1 tablespoon (15 ml) maple syrup (for rim)
  • Flaky sea salt, such as Maldon (for rim)
  • 1 tablespoon (15 ml) caramel sauce (for rim)

Instructions

  1. Prepare the Fruit: Wash apples and pear. Cut in half, remove cores, and slice into thin rounds or half-moons (about 1/4-inch thick). Toss apple slices with a little lemon juice if making ahead to prevent browning.
  2. Make the Caramel Rim: Mix granulated sugar and maple syrup in a small bowl until it looks like wet sand. Pour caramel sauce onto a small plate. Dip rim of each glass into caramel sauce, then into sugar-maple mixture, then lightly sprinkle with flaky sea salt. Set aside to dry.
  3. Build the Sangria: In a large pitcher, add sliced apples and pear, cinnamon sticks, and star anise.
  4. Pour the Liquids: Pour entire bottle of white wine into pitcher. Add apple cider and apple brandy (if using). Stir gently to combine.
  5. Add the Caramel: Drizzle in 1/4 cup salted caramel sauce. Stir until mostly dissolved.
  6. Chill: Cover pitcher and refrigerate for at least 2 hours, preferably 4-6 hours. Stir gently before serving.
  7. Serve: Fill prepared glasses with ice (optional). Ladle or pour sangria into glasses, ensuring each gets some fruit and a cinnamon stick. Garnish with fresh rosemary sprig. Serve immediately.

Notes

For best flavor, chill at least 4 hours. The caramel rim is optional but recommended. Can be made up to 24 hours ahead. For a non-alcoholic version, substitute wine with sparkling apple cider or ginger ale and skip the brandy.
