A simple, dump-and-go slow cooker chili that is perfect for game day. This recipe uses just a few pantry staples to create a hearty, flavorful meal that is ready in hours with minimal effort.

  • 1.5 pounds 80/20 ground beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1.5 cups medium salsa
  • 1 cup low-sodium beef broth
  • 1 can (8 oz) tomato sauce
  • 2 tablespoons pure chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Open the cans of black beans and kidney beans. Pour them into a colander and rinse under cold water until the water runs clear. Set aside.
  2. Place the rinsed beans, tomato sauce, beef broth, and salsa into the slow cooker. Stir together with a wooden spoon.
  3. Sprinkle the chili powder, cumin, garlic powder, and onion powder over the bean mixture. Stir well to combine.
  4. Break the ground beef into small chunks with your hands and drop it into the slow cooker. Do not cook it first.
  5. Cover the slow cooker with the lid. Set it to LOW for 6-8 hours or HIGH for 3-4 hours.
  6. Once cooked, stir the chili well. The beef should be browned and tender. Taste and add salt and pepper as needed.
  7. Serve hot, topped with shredded cheese, sour cream, and chopped cilantro if desired.

Notes

Rinsing the beans is crucial to remove excess sodium and starch, which helps the chili stay thicker. If the chili looks too thick, add a splash more broth. If it’s too thin, let it cook on HIGH for the last 30 minutes uncovered. Chili tastes better the next day, so let it sit in the fridge overnight if possible.
