  • 4 cups fresh peaches, peeled and sliced (about 5 medium peaches)

  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan lightly with butter or non-stick spray.
  2. In a large bowl, combine 2 cups all-purpose flour, 1 cup rolled oats, 3/4 cup packed brown sugar, 1/4 cup granulated sugar, 1 teaspoon cinnamon, and 1/2 teaspoon salt. Mix well.
  3. Cut in the cold, cubed butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs with pea-sized pieces. Do not overwork.
  4. Set aside about 1 1/2 cups of this mixture for the topping. Press the remaining streusel mixture evenly into the bottom of the prepared pan to form the crust.
  5. In a separate bowl, toss the sliced peaches with 1/2 cup granulated sugar, 1 tablespoon lemon juice, 2 tablespoons cornstarch, 1 teaspoon vanilla extract, and optional 1/4 teaspoon nutmeg. Let sit for 5 minutes.
  6. Spread the peach filling evenly over the crust, draining any excess juice to avoid sogginess.
  7. Sprinkle the reserved streusel topping evenly over the peaches.
  8. Bake for 40-45 minutes until the top is golden brown and the peach filling is bubbling. Tent with foil if topping browns too quickly.
  9. Cool completely in the pan on a wire rack for at least two hours or overnight for best results.
