  • 1 to 1.5 teaspoons kosher salt
  • Freshly cracked black pepper to taste
  • Chives or parsley, chopped (optional, for garnish)

Instructions

  1. Place potato cubes in a large pot, cover with cold water by an inch, and add a pinch of salt. Bring to a boil, then reduce to a simmer. Cook for 15-20 minutes until tender.
  2. While potatoes cook, melt butter in a small saucepan over medium heat. Swirl occasionally until the butter foams, turns golden amber, and smells nutty (about 5-7 minutes).
  3. Remove the butter from heat and immediately stir in the minced garlic. Set aside.
  4. Drain the potatoes thoroughly and let them sit for a minute to steam off excess water. Return potatoes to the warm pot.
  5. Warm the heavy cream and milk mixture, then pour it over the potatoes.
  6. Mash or rice the potatoes until smooth.
  7. Pour the brown butter and garlic mixture over the mashed potatoes.
  8. Add salt and pepper to taste. Mix gently to incorporate without overworking the starches.
  9. Serve immediately, garnished with chives or parsley if desired.

Ensure milk and cream are warmed before adding to prevent gluey texture. Use a light-colored pan to monitor butter browning. Do not use a food processor as it overworks the starches. Potatoes should be drained well to avoid soupy results.
