  • 1 tbsp olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 2 (4 oz) cans diced green chiles (mild or medium)
  • 4 cups low-sodium chicken broth
  • 2 (15 oz) cans cannellini beans, drained and rinsed
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 oz cream cheese, softened and cut into cubes
  • 1/2 cup heavy cream
  • 1 tbsp lime juice (fresh)
  • Fresh cilantro, chopped (for serving)
  • Sliced jalapeños (for serving)
  • Shredded Monterey Jack cheese (for serving)
  • Avocado, diced (for serving)
  • Tortilla chips or crusty bread (for serving)

Instructions

  1. Sauté the aromatics: Heat olive oil in a large skillet over medium heat. Add diced onion and cook until soft and translucent, about 3-4 minutes. Add minced garlic and cook for another 30 seconds until fragrant. Transfer to slow cooker.
  2. Layer the ingredients: Place chicken breasts in slow cooker on top of onions and garlic. Pour in chicken broth, then add drained cannellini beans, diced green chiles, cumin, oregano, smoked paprika, salt, and pepper. Stir gently.
  3. Slow cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is tender and shreds easily.
  4. Shred the chicken: Remove chicken from slow cooker, shred with two forks, and return to slow cooker.
  5. Make it creamy: In a small bowl, whisk together softened cream cheese and heavy cream until smooth. Pour into slow cooker and stir well. Cook for another 15-20 minutes on low, stirring occasionally, until thick and creamy.
  6. Finish with lime juice: Stir in fresh lime juice. Taste and adjust seasoning as needed.
  7. Serve: Ladle into bowls and top with desired garnishes.

Notes

For a dairy-free version, use full-fat canned coconut milk instead of heavy cream and a dairy-free cream cheese alternative. To make it gluten-free, double-check chicken broth label. For more heat, add a diced jalapeño with the onions or use hot green chiles. The chili thickens as it cools; add a splash of broth when reheating if needed.
