Creamy Crockpot White Chicken Chili Recipe with Corn and Lime

A cozy and light white chicken chili made in the crockpot with tender chicken, white beans, sweet corn, and a bright hint of lime. Easy to prepare and perfect for weeknight meals.

  • 1.5 pounds boneless, skinless chicken breasts, trimmed of excess fat
  • Two 15-ounce cans white beans (cannellini or Great Northern), drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • One 4-ounce can diced green chilies
  • 3 cups low sodium chicken broth
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon oregano
  • Pinch of cayenne pepper (optional)
  • 1/2 cup plain Greek yogurt or sour cream
  • Juice of one large lime (about 2 tablespoons)
  • A handful of fresh cilantro, chopped
  • Salt and black pepper to taste (start with 1 teaspoon salt)

Instructions

  1. Finely chop the onion and mince the garlic cloves (about 5 minutes).
  2. Place the trimmed chicken breasts at the bottom of the slow cooker.
  3. Add the rinsed white beans, corn kernels, diced green chilies, chopped onion, minced garlic, cumin, chili powder, oregano, and cayenne pepper if using.
  4. Pour in the 3 cups of chicken broth.
  5. Cover and cook on low for 6 hours or on high for 3-4 hours until the chicken is tender and easily shreddable.
  6. Shred the chicken directly in the crockpot using two forks (about 5 minutes).
  7. Use an immersion blender to puree about one-third of the chili in the pot, or transfer a portion to a blender and puree until smooth, then stir back in to create creaminess.
  8. Stir in the Greek yogurt and lime juice, mix well, and taste for seasoning. Add salt and pepper as needed.
  9. Sprinkle chopped fresh cilantro over the top just before serving.

Notes

For a dairy-free version, substitute Greek yogurt with coconut yogurt or omit it entirely. Use fresh lime juice for best flavor. If chili is too thick after blending and adding yogurt, add a splash of broth or water to loosen. Shred chicken only after fully cooked to keep it tender.
