  • 3 large English cucumbers, sliced into thin half-moons
  • 1 cup feta cheese, crumbled (block feta preferred)
  • 1 cup plain full-fat Greek yogurt
  • 1/2 cup fresh dill, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Wash cucumbers thoroughly. If using English cucumbers, leave skin on; if using regular cucumbers, peel and optionally scoop out seeds. Slice into thin half-moons (approx. 1/4 inch thick) and place in a large mixing bowl.
  2. In a small bowl, combine Greek yogurt, olive oil, red wine vinegar, lemon juice, minced garlic, salt, and black pepper. Whisk vigorously until the mixture is smooth and creamy. Taste and adjust seasoning if needed.
  3. Pour the dressing over the sliced cucumbers. Toss gently with tongs or a large spoon to ensure every slice is coated. If the mixture is too thick, add a splash of water or more lemon juice.
  4. Gently fold in the crumbled feta cheese and chopped fresh dill. Be careful not to crush the feta.
  5. Cover the bowl with plastic wrap or a lid and refrigerate for at least 10-15 minutes to allow flavors to meld and cucumbers to soften slightly.
  6. Give the salad a final stir before serving. Taste and adjust seasoning one last time. Garnish with extra dill if desired and serve cold.

Notes

For best results, use block feta rather than pre-crumbled to avoid anti-caking agents. If cucumbers are watery, salt them and let sit for 10 minutes, then rinse and pat dry before using. The salad tastes best after resting in the fridge for at least 10 minutes. It keeps in the refrigerator for up to 2 days, though the cucumbers may soften over time.
