A simple, creamy overnight oats recipe made with rolled oats, Greek yogurt, and peanut butter. This high-protein breakfast requires no cooking and is perfect for meal prep.

  • 1 cup Old-Fashioned Rolled Oats
  • 1/2 cup Plain Greek Yogurt
  • 2 tablespoons Creamy Peanut Butter
  • 3/4 cup Milk (dairy or plant-based)
  • 1 tablespoon Honey or Maple Syrup (optional)
  • 1 pinch Salt

Instructions

  1. In a mason jar or bowl, combine the rolled oats and a pinch of salt. Stir to distribute evenly.
  2. Pour in the milk, Greek yogurt, and peanut butter. Add honey or maple syrup if using.
  3. Mix thoroughly with a spoon or whisk until the peanut butter is fully dissolved and no chunks remain.
  4. Seal the jar and place it in the refrigerator for at least 6 hours, preferably overnight.
  5. Stir well before eating. If the mixture is too thick, add a splash more milk.

Notes

Do not use instant oats as they will turn to mush. Use room temperature ingredients for easier mixing. If using natural peanut butter, stir the oil in before measuring. Store in the fridge for up to 5 days. Best served cold.
