Creamy Leftover Turkey Pot Pie: Easy 30-Minute Recipe

A forgiving and delicious comfort food recipe that transforms leftover turkey into a creamy, savory pot pie with a flaky puff pastry crust. Perfect for using up holiday scraps in under 30 minutes.

  • 2 cups cooked turkey, shredded or diced (about 810 ounces)
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth (low-sodium)
  • 1/2 cup whole milk
  • 1 cup mixed vegetables, frozen or fresh (peas, carrots, corn)
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1 sheet frozen puff pastry, thawed
  • 1 large egg, beaten with 1 tablespoon water
  • 1 teaspoon coarse sea salt

Instructions

  1. Preheat oven to 400°F (200°C). Place a baking sheet on the middle rack to heat up. Grease a 9-inch pie dish with butter or cooking spray.
  2. In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for about one minute until it smells nutty, without browning.
  3. Slowly pour in the chicken broth while whisking vigorously to prevent lumps. Continue whisking until the mixture thickens slightly, then pour in the milk.
  4. Add dried thyme and black pepper. Simmer gently for 2-3 minutes until the sauce coats the back of a spoon. Taste and add salt if needed.
  5. Stir in the shredded turkey and mixed vegetables. Remove from heat.
  6. Pour the turkey mixture into the prepared pie dish, mounding it slightly in the center.
  7. Unroll the thawed puff pastry onto a lightly floured surface. Trim it to be slightly larger than the pie dish diameter.
  8. Drape the pastry over the filling, pressing edges gently to seal. Trim excessive overhang.
  9. Brush the top with egg wash and sprinkle with coarse sea salt. Cut two or three small slits in the top to vent steam.
  10. Place the pie dish on the preheated baking sheet. Bake for 20-25 minutes until the crust is puffed, golden brown, and the filling is bubbling.
  11. Remove from oven and let cool for 5-10 minutes before serving.

Notes

Use low-sodium broth to control salt levels. Keep puff pastry cold until baking for best flakiness. If the crust browns too quickly, tent with aluminum foil. The sauce should coat the back of a spoon; if too thin, simmer longer or add a cornstarch slurry.
