  • 1 tsp lemon juice

Instructions

  1. Prep the Strawberry Topping: Combine sliced strawberries, sugar, and lemon juice in a bowl. Stir gently and set aside for at least 10 minutes to macerate.
  2. Make the Crust: Crush graham crackers finely using a food processor or rolling pin. Transfer crumbs to a bowl, add melted butter and sugar, and mix until crumbs are evenly coated and hold together when pressed.
  3. Prepare the Cheesecake Layer: Beat softened cream cheese until smooth. Slowly add powdered sugar and vanilla extract, mixing until combined. In a separate bowl, whip cold heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture until smooth and creamy.
  4. Assemble the Parfaits: Spoon about 2 tablespoons of graham cracker crust into the bottom of each jar. Layer with about ¼ cup of cheesecake filling, then add a spoonful of macerated strawberries. Repeat layering if jars are tall enough, finishing with strawberry topping.
  5. Chill and Serve: Cover jars and refrigerate for at least 2 hours, preferably overnight, to allow flavors to meld and crust to soften.

Notes

Let cream cheese soften at room temperature for about 30 minutes before mixing to avoid lumps. Use cold heavy cream and chilled bowls for better whipping. Fold whipped cream gently to keep the cheesecake layer airy. Macerate strawberries for at least 10 minutes to develop syrupy glaze. Chill parfaits for at least 2 hours or overnight for best texture. For dairy-free version, substitute cream cheese and heavy cream with dairy-free alternatives. Frozen strawberries can be used if thawed and drained. Adjust sugar to taste, especially if berries are very sweet.
