  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed recommended)
  • 2 cups fresh baby spinach
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml)
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning (blend of basil, oregano, thyme)
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh basil, chopped (for garnish)

Instructions

  1. Pound the chicken breasts gently to about 1/2-inch thickness for even cooking. Season both sides generously with salt, pepper, and dried Italian seasoning.
  2. Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes on each side until golden brown and cooked through. Remove from pan and set aside.
  3. In the same skillet, add minced garlic and sun-dried tomatoes. Stir constantly for about 1 minute until fragrant but not burnt. Add a splash of olive oil if pan looks dry.
  4. Pour in chicken broth and heavy cream. Bring to a gentle simmer, scraping up any browned bits from the bottom of the pan. Stir in grated Parmesan cheese until melted and smooth. Avoid boiling to keep sauce creamy.
  5. Nestle the chicken breasts back into the sauce. Add baby spinach around the chicken, letting it wilt gently in the simmering sauce. Cook for 3-4 minutes, spooning sauce over the chicken occasionally.
  6. Season with additional salt, pepper, and red pepper flakes if using. Sprinkle fresh basil over the top just before serving.

Notes

Use oil-packed sun-dried tomatoes for best flavor and moisture. Do not rush searing the chicken to develop a golden crust. Simmer sauce gently to avoid curdling. Stir Parmesan in off heat to prevent clumping. If sauce thickens too much, add a splash of broth or cream to loosen. Fresh basil added at the end brightens the dish.
