Creamy One-Pot Tuscan Chicken

A quick and easy one-pot Tuscan chicken recipe featuring a creamy sauce with sun-dried tomatoes and spinach, perfect for weeknight dinners or casual gatherings.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700 g), trimmed of excess fat
  • 2 tablespoons extra virgin olive oil
  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil preferred)
  • 3 cups fresh baby spinach (or kale as substitute)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml), low sodium if possible
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Pat the chicken breasts dry with paper towels. Season generously with salt, pepper, and half of the dried Italian herbs. (About 5 minutes)
  2. Heat olive oil in a large deep skillet or sauté pan over medium-high heat until shimmering (about 2 minutes).
  3. Place chicken breasts in the pan and cook undisturbed for 4-5 minutes until golden brown on one side. Flip and sear the other side for another 4 minutes. Remove chicken and set aside.
  4. Reduce heat to medium. Add minced garlic and sun-dried tomatoes to the pan, stirring constantly for 1-2 minutes until fragrant.
  5. Pour in chicken broth and heavy cream. Stir to combine and bring to a gentle simmer.
  6. Add baby spinach and cook until wilted, about 2-3 minutes.
  7. Nestle chicken breasts back into the creamy sauce. Cover the pan and cook on low heat for 8-10 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  8. Sprinkle grated Parmesan cheese over the chicken and sauce. Stir gently to incorporate and melt the cheese. Taste and adjust seasoning as needed.
  9. Serve chicken with generous spoonfuls of creamy sauce alongside pasta, rice, or crusty bread.

Notes

Dry chicken breasts before searing to achieve a golden crust. Use medium-high heat for searing and reduce heat before adding dairy to prevent curdling. Simmer sauce gently and avoid boiling after adding cream. If sauce is too thin after adding Parmesan, simmer uncovered to thicken. Avoid overcrowding pan when searing chicken; cook in batches if needed.
