  • 1 large ripe peach, peeled and diced
  • ½ cup (75g) fresh raspberries
  • ½ cup (120g) Greek yogurt, plain or vanilla
  • 1 cup (240ml) milk of choice (dairy or plant-based)
  • 12 tablespoons honey or maple syrup (optional)
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon lemon juice
  • Pinch of salt

Instructions

  1. Wash, peel (if desired), and dice one large ripe peach into small cubes about ¼ inch (0.6 cm). Toss the diced peaches with a teaspoon of lemon juice to keep them vibrant and prevent browning.
  2. In a small bowl, lightly mash ½ cup (75g) of fresh raspberries with a fork, leaving some chunks for texture. Set aside.
  3. In a medium bowl, combine 1 cup (90g) rolled oats, ½ cup (120g) Greek yogurt, 1 cup (240ml) milk, 1-2 tablespoons honey or maple syrup (adjust to taste), 1 teaspoon vanilla extract, 1 tablespoon chia seeds (if using), and a pinch of salt. Stir well until everything is evenly incorporated.
  4. Gently fold in the diced peaches, spreading them evenly throughout the oat mixture.
  5. Spoon half of the oat and peach mixture into your jar or container. Then, add about half of the mashed raspberry mixture on top. Using a butter knife or skewer, gently swirl the raspberries into the oats to create a marbled effect. Repeat with the remaining oat mixture and raspberry puree for a layered look.
  6. Close the jar tightly and place it in the refrigerator overnight (or at least 6 hours) to let the oats soak and flavors meld.
  7. In the morning, give the oats a gentle stir to blend the raspberry swirl further if desired. Top with extra fresh peach slices or whole raspberries for garnish. Serve chilled.

Notes

Use old-fashioned rolled oats for best texture. For dairy-free, swap Greek yogurt with coconut or almond yogurt and use plant-based milk. Adjust sweetness based on peach ripeness. Do not over-mix raspberry puree to maintain marbled effect. Oats keep well up to 3 days refrigerated. Add more chia seeds if mixture is too wet or a splash of milk if too thick in the morning.
