  • 1/2 cup (120ml) milk of choice
  • 1/4 cup (60g) plain Greek yogurt
  • 1 scoop (about 30g) vanilla or unflavored protein powder
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • 2 tablespoons (32g) creamy peanut butter
  • Pinch of sea salt (if peanut butter is unsalted)
  • Optional toppings: banana slices, fresh berries, chopped apples, dark chocolate chips, cacao nibs, chopped peanuts, granola, extra peanut butter drizzle

Instructions

  1. Combine the dry ingredients: In your mason jar or container, add 1/2 cup rolled oats, 1 scoop protein powder, and 1 tablespoon chia seeds if using. Give it a quick stir with your spoon to break up any clumps of protein powder.
  2. Add the wet ingredients: Pour in 1/2 cup milk, 1/4 cup Greek yogurt, and 1 tablespoon maple syrup or honey. Don’t stir yet — just let everything sit together for a moment.
  3. Add the peanut butter: Spoon in 2 tablespoons of creamy peanut butter right on top. Stir it all in now. Don’t save it for the top.
  4. Stir thoroughly: Use your spoon to mix everything together. Really get in there — scrape the bottom and sides. The peanut butter needs to be fully incorporated. Keep stirring until you don’t see streaks of white or brown. The mixture should be uniform and creamy.
  5. Seal and refrigerate: Put the lid on your jar and place it in the refrigerator. Let it sit for at least 6 hours, but overnight is best (8-12 hours).
  6. Check the texture in the morning: Pull the jar out and give it a stir. The oats should be thick, creamy, and uniform. If it’s too thick for your liking, stir in a splash of milk (1-2 tablespoons) until it reaches your desired consistency. If it’s too thin, add a teaspoon of chia seeds and let it sit for another 30 minutes.
  7. Add toppings and enjoy: Top with sliced banana, a sprinkle of chopped peanuts, or a few dark chocolate chips. Eat it cold straight from the fridge, or microwave it for 30-45 seconds if you prefer warm oats.

Notes

For best texture, use rolled oats (not instant or steel-cut). If using plant-based protein powder, mix it with a tablespoon of milk first to prevent lumps. Microwave peanut butter for 10-15 seconds before adding for easier mixing. Oats keep in the fridge for up to 5 days; flavors are best on days 2-3.
