  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup tahini
  • 23 tablespoons pure maple syrup
  • 12 tablespoons fresh lemon juice
  • 24 tablespoons warm water
  • 1 small clove garlic, minced
  • 1/4 cup pomegranate arils (optional, for garnish)
  • 2 tablespoons chopped parsley or cilantro (optional, for garnish)
  • 1 tablespoon toasted sesame seeds (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil.
  2. Wash the delicata squash. Slice off the top and bottom ends to create flat surfaces. Cut the squash in half lengthwise and scoop out the seeds and pulp.
  3. Cut each half into half-moon slices, about 1/2-inch thick.
  4. Place squash slices on the prepared baking sheet. Drizzle with olive oil and sprinkle with kosher salt, black pepper, and garlic powder. Toss to coat evenly.
  5. Spread slices in a single layer without overlapping. Roast for 25-30 minutes, flipping halfway through, until edges are golden brown and flesh is tender.
  6. While squash roasts, combine tahini, maple syrup, lemon juice, minced garlic, and 2 tablespoons warm water in a small bowl.
  7. Whisk vigorously until smooth. Add more warm water one tablespoon at a time if needed to reach a drizzle-able consistency.
  8. Arrange roasted squash on a serving platter. Drizzle generously with the tahini sauce.
  9. Garnish with pomegranate arils, chopped herbs, and toasted sesame seeds if desired. Serve immediately.

Notes

Do not peel the delicata squash as the skin is edible and becomes tender when roasted. Ensure the squash is in a single layer on the baking sheet to promote caramelization rather than steaming. Use warm water for the tahini sauce to prevent separation and ensure a smooth emulsion. Leftovers can be stored in the refrigerator for up to 3 days.
