  • 1 large baguette or round loaf (1214 inches)
  • 8 ounces cream cheese, softened
  • 10 ounces frozen spinach, thawed and thoroughly drained
  • ยฝ cup mayonnaise
  • ยฝ cup sour cream
  • 3 cloves garlic, minced
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • ยฝ cup onion, finely diced
  • ยฝ teaspoon black pepper
  • ยผ teaspoon nutmeg
  • Pinch of salt
  • Melted butter (for brushing bread)

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC) and line a baking sheet with parchment paper.
  2. Slice the top 2 inches off the bread loaf. Carefully cut around the inside edge and scoop out the soft bread, leaving a 1-inch thick shell. Save the removed bread for croutons.
  3. Brush the inside and outside of the bread bowl with melted butter. Place on the baking sheet and toast for 5-7 minutes until lightly golden. Remove and let cool slightly.
  4. Thaw frozen spinach and squeeze out all excess moisture using hands or a clean towel. Chop roughly.
  5. In a large mixing bowl, combine softened cream cheese, mayonnaise, and sour cream. Mix until smooth.
  6. Add minced garlic, diced onion, nutmeg, pepper, and salt to the cream cheese mixture. Stir well.
  7. Fold in the shredded cheddar cheese and drained spinach. Mix until evenly distributed and thick.
  8. Spoon the spinach mixture into the toasted bread bowl, pressing down gently and smoothing the top.
  9. Weave the shredded mozzarella cheese across the top in a crisscross pattern to create a spider web effect.
  10. Bake for 15-20 minutes until the cheese is bubbly and golden brown.
  11. Let cool for 5 minutes before serving. Serve with reserved bread chunks.

Notes

Ensure the spinach is thoroughly drained to prevent a runny dip. Toasting the bread bowl creates a barrier against sogginess. If the top browns too quickly, cover loosely with foil. For a gluten-free version, use a gluten-free loaf or serve in a ceramic bowl.
