  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup hot sauce (like Frank’s RedHot Original)
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon Worcestershire sauce (optional)
  • Ranch dressing or blue cheese dressing, for dipping
  • Celery sticks and carrot sticks, for serving
  • Fresh parsley or chives, chopped, for garnish

Instructions

  1. Preheat your oven to 450ยฐF (232ยฐC). Line a large baking sheet with parchment paper or a silicone mat.
  2. Wash the head of cauliflower and pat it completely dry. Cut into bite-sized florets, about 1 to 1.5 inches wide. Discard the thick core and any large stems.
  3. In a large mixing bowl, whisk together 1 cup all-purpose flour, 1 cup cold water, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until smooth. The batter should be the consistency of thin pancake batter.
  4. Add the cauliflower florets to the bowl with the batter. Gently toss until each floret is evenly coated.
  5. Using tongs, lift each battered floret out of the bowl, letting excess batter drip off. Place on the prepared baking sheet in a single layer, making sure they aren’t touching.
  6. Bake for 20 minutes without opening the oven door. After 20 minutes, remove the sheet and carefully flip each floret over.
  7. Return to the oven and bake for another 10 to 15 minutes, until deep golden brown and firm to the touch. Total baking time: 30 to 35 minutes.
  8. While the cauliflower bakes, make the buffalo sauce. In a small saucepan over low heat, combine 1/2 cup hot sauce, 1/4 cup melted unsalted butter, 1 tablespoon honey (if using), and 1 teaspoon Worcestershire sauce (if using). Whisk until smooth and keep warm.
  9. Once the cauliflower is done, transfer the hot bites to a large bowl. Pour the warm buffalo sauce over them and gently toss until evenly coated.
  10. Serve immediately on a platter. Garnish with chopped fresh parsley or chives. Serve with ranch or blue cheese dressing, and celery and carrot sticks on the side.

Notes

For extra-crispy bites, after the first 20 minutes of baking, let the bites cool on the baking sheet for 5 minutes before flipping. Serve immediately for best texture. To reheat leftovers, spread on a baking sheet and warm at 400ยฐF for 5-7 minutes. Avoid the microwave.
