These easy-to-make appetizers feature flaky puff pastry filled with creamy brie cheese and tart cranberry sauce, baked until golden brown for a perfect balance of sweet and savory flavors.

  • 8 oz brie cheese (cut into 1/2 inch cubes)
  • 1 cup cranberry sauce (jellied or whole berry)
  • 1 large egg (beaten with 1 tbsp water for egg wash)
  • 1 tbsp melted butter (optional alternative to egg wash)
  • Sesame seeds or poppy seeds (optional, for topping)

Instructions

  1. Thaw puff pastry sheets according to package instructions (approx. 30-40 minutes) until pliable but still cold.
  2. Preheat oven to 400°F (200°C).
  3. Cut brie cheese into small 1/2 inch cubes. If too soft, freeze for 10 minutes to firm up.
  4. Roll out thawed pastry sheets on a lightly floured surface into 12×12 inch rectangles.
  5. Cut pastry into 3×3 inch squares (yields approx. 16-20 squares per sheet).
  6. Place a cube of brie in the center of each square, topped with a small dollop of cranberry sauce.
  7. Fold the corners of the square up over the filling to meet in the middle or fold into a triangle. Press edges firmly to seal.
  8. Brush tops with egg wash and sprinkle with sesame or poppy seeds if desired.
  9. Place bites on a parchment-lined baking sheet, leaving space between them.
  10. Bake for 15-20 minutes until puffed and golden brown.
  11. Cool for 5 minutes before serving warm.

Notes

Keep pastry cold to ensure flakiness. Do not overstuff with filling to prevent leaking. Use parchment paper to prevent sticking. Can be frozen unbaked and baked from frozen, adding 2-3 minutes to cook time. Reheat in oven at 350°F to maintain crispness.
