  • 1 cup (226g) Unsalted Butter, cold and cubed
  • 1/2 cup (100g) Granulated Sugar
  • 1 cup (140g) Dried Cranberries
  • 1 cup (115g) Raw Pistachios, roughly chopped
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour and salt. Set aside.
  3. In a large bowl, combine the cold, cubed butter and granulated sugar. Using a pastry cutter or fingers, work the butter into the sugar until it resembles a coarse, sandy texture with small pea-sized bits of butter remaining.
  4. Stir in the vanilla extract until just combined.
  5. Pour the dry ingredient mixture into the butter mixture. Use a rubber spatula to fold until the dough comes together into a ball. Do not overmix.
  6. Gently fold in the chopped pistachios and dried cranberries.
  7. Roll the dough into 1.5-inch diameter balls. Place on prepared baking sheets, leaving 2 inches between each ball. Press down gently to flatten to about half an inch thick.
  8. Bake for 12-15 minutes until edges are light golden brown. Centers may look soft but will firm up as they cool.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Keep butter cold to prevent spreading. Do not overmix the dough to ensure a tender, crispy texture rather than a tough one. For extra flavor, lightly toast pistachios before chopping. If your kitchen is warm, chill the dough balls for 10 minutes before baking.
