Quick and easy tailgate sliders featuring crispy panko-breaded pulled pork and sharp cheddar cheese, pan-fried or baked for a crunchy texture that stands up to game day chaos.

Ingredients

Scale
  • 2 cups cooked, shredded pulled pork
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup panko breadcrumbs
  • 1/2 cup BBQ sauce
  • 2 tablespoons mayonnaise
  • 1 large egg, beaten
  • 8 to 10 slider buns (Hawaiian rolls or dinner rolls)
  • 2 tablespoons butter, melted
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) or heat a skillet over medium heat.
  2. In a medium bowl, mix shredded pork, shredded cheddar cheese, mayonnaise, garlic powder, salt, and pepper until a sticky, cohesive paste forms.
  3. Set up three stations: one with the pork mixture, one with the beaten egg, and one with the panko breadcrumbs.
  4. Take about 2 tablespoons of the pork mixture and press it onto the bottom half of a slider bun.
  5. Dip the top of the pork mound into the egg wash, ensuring full coverage.
  6. Roll the egg-coated side into the panko breadcrumbs, pressing gently to adhere.
  7. Place assembled sliders on a baking sheet or plate.
  8. Repeat with remaining mixture and buns to make 8-10 sliders.
  9. Drizzle BBQ sauce lightly over the top of each breaded slider.
  10. Brush the tops with melted butter.
  11. Bake for 10-12 minutes until golden brown and crispy, or pan-fry for 2-3 minutes per side.
  12. Let rest for 2 minutes before serving to allow cheese to set.

Notes

For best results, grate your own cheese to ensure proper melting. If using dry leftover pork, add extra mayo or a splash of broth. Do not overcrowd the baking sheet to ensure crispiness. These are best served immediately; reheat in oven or air fryer to restore crunch.
