These crispy honey BBQ baked chicken wings are the perfect balance of sweet, tangy, and spicy. By using a baking powder technique and a two-stage baking process, you get shattering crispiness without deep frying.

Ingredients

Scale
  • 3 pounds chicken wings, split into flats and drumettes, patted completely dry
  • 1 tablespoon aluminum-free baking powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 cup honey
  • 1/2 cup BBQ sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Pat chicken wings completely dry with paper towels.
  3. In a large bowl, combine baking powder, salt, garlic powder, onion powder, and black pepper.
  4. Add dried wings to the bowl and toss until lightly coated. Let sit for 15 minutes.
  5. Line a rimmed baking sheet with foil and place a wire rack on top.
  6. Arrange wings in a single layer on the rack, ensuring they do not touch.
  7. Bake for 40 minutes, flipping halfway through at the 20-minute mark.
  8. While wings bake, combine honey, BBQ sauce, apple cider vinegar, Worcestershire sauce, hot sauce, and melted butter in a small saucepan.
  9. Simmer the sauce over medium heat for 5-7 minutes until it thickens slightly.
  10. Remove wings from oven and transfer to a large clean bowl.
  11. Pour warm glaze over hot wings and toss vigorously to coat.
  12. Serve immediately.

Notes

Ensure wings are completely dry before adding baking powder to achieve maximum crispiness. Do not overcrowd the baking sheet; cook in batches if necessary. Use aluminum-free baking powder to avoid metallic taste. Reheat leftovers in the oven at 400°F to restore crispiness.
