  • 1/2 cup honey
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup ketchup
  • 4 cloves garlic, minced
  • Optional garnish: 2 tablespoons chopped fresh parsley or sliced green onions

Instructions

  1. Make the sauce. In a small mixing bowl, whisk together 1/2 cup honey, 1/2 cup low-sodium soy sauce, 1/4 cup ketchup, and 4 cloves minced garlic. Whisk until the honey is fully incorporated and the sauce looks smooth and glossy.
  2. Add meatballs to the crockpot. Place 2 lbs frozen fully cooked Italian meatballs directly into the slow cooker. Do not thaw them first. Spread them into an even layer.
  3. Pour the sauce over the meatballs. Pour the honey garlic sauce evenly over the meatballs. Use a rubber spatula to scrape every bit of sauce from the bowl. Gently stir to coat the meatballs, but don’t overmix.
  4. Cook on low for 3-4 hours. Cover the slow cooker and cook on low for 3 to 4 hours. After 2 hours, give the meatballs a gentle stir to redistribute the sauce.
  5. Thicken the sauce (optional). If the sauce seems too thin after 3 hours, remove the lid and cook on high for an additional 15-20 minutes. Alternatively, you can mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir it into the sauce. Cook for 10 more minutes.
  6. Garnish and serve. Sprinkle with chopped fresh parsley or sliced green onions for color. Transfer to a serving platter with toothpicks, or serve directly from the slow cooker on the ‘warm’ setting.

Notes

Don’t overcook the meatballs. Stick to 3-4 hours on low. Use low-sodium soy sauce to control saltiness. Stir gently and only once at the 2-hour mark. Double the sauce for extra coverage if using more meatballs. Toast sesame seeds for garnish for added crunch.
