  • 6 cups (about 150g) crispy rice cereal
  • 4 cups (about 280g) mini marshmallows or chopped regular marshmallows
  • 3 tablespoons (45g) unsalted butter, softened
  • 1 tablespoon high-quality ceremonial grade matcha powder
  • 1 cup (about 170g) white chocolate chips
  • 1 teaspoon vegetable oil or shortening (for shaping)
  • Optional: green food coloring

Instructions

  1. Line a large baking sheet or countertop with wax or parchment paper and lightly grease with vegetable oil or shortening.
  2. In a large saucepan, melt 3 tablespoons of unsalted butter over low heat for 2-3 minutes.
  3. Add 4 cups of marshmallows and stir continuously until completely melted, smooth, and glossy (about 5 minutes). Avoid overheating or burning.
  4. Remove from heat and sift in 1 tablespoon of matcha powder. Stir gently until the color is even throughout. Add green food coloring if desired.
  5. Pour 6 cups of crispy rice cereal into the saucepan and fold gently with a silicone spatula until all cereal is coated (2-3 minutes).
  6. Using a cookie scoop or two tablespoons, scoop out portions and shape into 1.5-inch diameter balls. Insert a skewer or popsicle stick halfway into each ball and place on prepared wax paper. Lightly oil hands if mixture is sticky.
  7. Refrigerate pops for at least 30 minutes to firm up.
  8. Melt 1 cup of white chocolate chips in a microwave-safe bowl in 20-second bursts, stirring until smooth.
  9. Pipe or spoon two small pointed ear shapes on parchment paper and allow to set at room temperature or chill for 10 minutes.
  10. Attach ears to the sides of each pop using a dab of melted white chocolate as glue. Hold gently to secure.
  11. Chill decorated pops in the fridge for 10-15 minutes to set completely before serving.

Notes

Use low heat when melting butter and marshmallows to avoid burning. Fold cereal gently to keep crispiness. Chill pops before adding ears to prevent melting. Lightly oil hands or utensils to handle sticky mixture. Adding a teaspoon of coconut oil to white chocolate can smooth it for easier piping.
