  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease the 8×8 inch pan or line it with parchment paper, letting some hang over the edges for easy lifting later.
  2. In a large bowl, whisk the melted butter and sugar together until well combined and glossy, about 2 minutes. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  3. Sift together the cocoa powder, flour, salt, and baking powder in a separate bowl. Gradually fold these into the wet mixture using a spatula until the batter is smooth and thick but not overmixed, about 3 minutes.
  4. In another bowl, beat the softened cream cheese with sugar, egg yolk, and vanilla extract until smooth and creamy, about 3-4 minutes.
  5. Pour the brownie batter into your prepared pan and smooth it out evenly. Dollop spoonfuls of the cream cheese mixture across the top, about 8-10 spots evenly spaced.
  6. Using a toothpick or skewer, drag it through the dollops of cream cheese mixture starting from the center outward in straight lines, then connect those lines in a circular motion to form the spider web pattern.
  7. Bake for 30-35 minutes until edges are set and pulling away from the pan but the center is still slightly gooey.
  8. Let the brownies cool completely on a wire rack before slicing, about 1 hour, to allow the cream cheese swirl to firm up and the spider web pattern to stay intact.

Notes

Do not overmix the batter after adding flour to keep brownies fudgy. Use room temperature eggs and cream cheese for smooth mixing.
