  • 6 cups (150g) crisp rice cereal
  • 10 oz (280g) mini marshmallows or chopped large marshmallows
  • 4 tablespoons (57g) unsalted butter, softened
  • 1 cup (240ml) caramel sauce, homemade or store-bought
  • 1 cup (200g) red candy melts or candy coating wafers
  • 1/4 cup (50g) green candy coating or green fondant
  • Optional: edible gold dust or white candy pearls for decoration

Instructions

  1. Line a baking sheet with parchment paper and set out your apple-shaped cookie cutter. (5 minutes)
  2. In a large nonstick saucepan, melt 4 tablespoons (57g) of unsalted butter over medium-low heat. Add 10 oz (280g) mini marshmallows and stir constantly until fully melted and smooth. Remove from heat immediately. (7-8 minutes)
  3. Pour 6 cups (150g) rice cereal into the marshmallow mixture. Gently fold together with a silicone spatula until every piece is coated. (3 minutes)
  4. Press the cereal mix firmly into a greased 9×13-inch pan or onto parchment paper about 1-inch thick. Let cool slightly, then use the apple-shaped cookie cutter to cut out shapes. Dip cutter in warm water if it sticks. (10-12 minutes)
  5. Warm 1 cup (240ml) caramel sauce gently until soft and pourable. Drizzle or dip the apple shapes to coat one side. Place back on parchment to set. (5 minutes)
  6. Melt 1 cup (200g) red candy melts in microwave-safe bowls in 30-second bursts, stirring until smooth. Repeat with 1/4 cup (50g) green candy coating for stems and leaves. (5 minutes)
  7. Using a small spoon or food-safe brush, coat the caramel-covered treats with red candy melts for a shiny apple look. Use green coating to pipe stems and leaves. Work quickly. (10 minutes)
  8. Allow candy coating to harden at room temperature or refrigerate for 10 minutes. Once set, carefully peel off parchment. (15-20 minutes)
  9. Optionally, dust with edible gold or add white candy pearls for a festive finish. Store in an airtight container once cooled. (5 minutes)

Notes

If mixture is too sticky, grease hands with butter or spray. Melt candy coating in short bursts to avoid burning. Use a damp cloth to clean caramel drips immediately. For dairy-free, substitute butter with coconut oil. Use gluten-free certified rice cereal for gluten-free version. Work quickly when applying candy coating as it hardens fast.
