This easy candy corn popcorn bark is the no-bake Halloween treat you didn’t know you needed. The combination of salty popcorn, sweet candy corn, and creamy white chocolate is pure magic, and it comes together in under 20 minutes.

Ingredients

Scale
  • 8 cups popped popcorn (plain or lightly salted; about 1/2 cup unpopped kernels or one standard bag of microwave popcorn)
  • 1 1/2 cups candy corn (preferably Brach’s)
  • 1 cup white chocolate chips or melting wafers (recommend Ghirardelli or Wilton)
  • 1/2 cup salted pretzels, broken into small pieces
  • 1/4 cup Halloween sprinkles (optional)
  • Pinch of flaky sea salt (Maldon or any finishing salt)

Instructions

  1. Prepare your popcorn. Pop your popcorn according to package directions or using your preferred method. You want about 8 cups of popped popcorn. Spread it out on the prepared baking sheet and pick out any unpopped kernels. Let the popcorn cool completely before moving on.
  2. Line your baking sheet. Line a large baking sheet with parchment paper or a silicone baking mat. Make sure your baking sheet fits in your refrigerator or freezer before you start.
  3. Melt the white chocolate. Place the white chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is smooth and fully melted. This usually takes about 1 1/2 to 2 minutes total. Be careful not to overheat.
  4. Combine the ingredients. In a large mixing bowl, combine the cooled popcorn, candy corn, and broken pretzel pieces. Pour the melted white chocolate over the top and stir gently with a spatula until everything is evenly coated. Work quickly.
  5. Spread the mixture. Transfer the coated popcorn mixture to the prepared baking sheet. Spread it into an even layer, about 1/2 to 3/4 inch thick. Don’t press too hard, or you’ll crush the popcorn.
  6. Add the toppings. While the chocolate is still wet, sprinkle the Halloween sprinkles and flaky sea salt over the top. Get creative if desired.
  7. Let it set. Place the baking sheet in the refrigerator for at least 30 minutes, or until the chocolate is completely firm. For a quicker option, freeze for about 15 minutes.
  8. Break into pieces. Once set, remove the bark from the baking sheet and break it into irregular pieces with your hands. Store in an airtight container at room temperature for up to a week.

Notes

Always use room-temperature popcorn to prevent the chocolate from melting. Don’t skip the flaky sea salt—it balances the sweetness. If the white chocolate seizes, stir in a teaspoon of coconut oil or shortening. For best results, make the bark a day ahead to allow flavors to meld.
