  • 1/2 cup (50 g) shredded carrots
  • 1/2 cup (60 g) diced red bell pepper
  • 1/4 cup (30 g) thinly sliced cucumber
  • 1/4 cup (15 g) baby spinach or mixed greens (optional)
  • Salt and freshly ground black pepper, to taste (optional)
  • Smoked paprika or cayenne pepper (optional)
  • Whole wheat or spinach tortilla wraps (optional)

Instructions

  1. In a mixing bowl, combine softened cream cheese, sour cream or Greek yogurt, chopped chives, and Dijon mustard. Mix until smooth and creamy. Season lightly with salt and pepper. (5 minutes)
  2. Rinse and dry all vegetables. Shred carrots, dice red bell pepper, thinly slice cucumber, and roughly chop spinach if using. Set aside. (10 minutes)
  3. Arrange deli turkey slices side by side on a clean surface, slightly overlapping to form an 8 x 10 inch rectangular layer. (2 minutes)
  4. Spread the cream cheese mixture evenly over the turkey layer, leaving about half an inch free at one edge to help with rolling. (3 minutes)
  5. Sprinkle shredded carrots, diced bell pepper, sliced cucumber, and spinach evenly over the cream cheese layer without packing too tightly. (3 minutes)
  6. Starting from the edge with the cream cheese, roll the turkey slices tightly into a log shape. Use the free edge to seal the roll. Wrap tightly in plastic wrap and chill in the fridge for at least 30 minutes. (5 minutes plus chilling time)
  7. Unwrap and slice the roll into 1/2-inch pinwheels using a sharp knife. Arrange on a platter and serve. (5 minutes)
