A simple and delicious summer galette featuring fresh peaches, a creamy cream cheese layer, and a honey drizzle for a perfect balance of sweetness and texture.

  • 1/4 teaspoon salt
  • 8 tablespoons (113g) unsalted butter, cold and cubed
  • 3 to 4 tablespoons ice water
  • 4 ounces (115g) cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon vanilla extract
  • 3 large fresh peaches, peeled and sliced
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon lemon juice
  • 2 tablespoons honey, for drizzling
  • Optional: coarse sugar for sprinkling on crust

Instructions

  1. In a large bowl or food processor, combine flour and salt. Add cold, cubed butter and pulse or cut into flour until mixture resembles coarse crumbs with pea-sized pieces.
  2. Slowly add 3 tablespoons ice water, mixing gently until dough just comes together. Add 4th tablespoon if dough feels dry.
  3. Form dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. In a small bowl, beat together softened cream cheese, granulated sugar, and vanilla extract until smooth. Set aside.
  5. Peel and slice peaches. Toss with brown sugar, cinnamon, and lemon juice.
  6. Roll chilled dough on a lightly floured surface into a 12-inch circle about 1/8 inch thick. Transfer to parchment-lined baking sheet.
  7. Spread cream cheese mixture evenly over dough, leaving a 2-inch border.
  8. Arrange peach slices in a single layer over cream cheese. Sprinkle any remaining juices over peaches.
  9. Fold dough edges over peaches, pleating to create a rustic border. Brush crust with water or beaten egg. Optionally sprinkle coarse sugar on crust.
  10. Bake at 400ยฐF (200ยฐC) for 35-40 minutes until crust is golden and peaches are bubbly and soft. Tent with foil if edges brown too fast.
  11. Cool galette for about 10 minutes, then drizzle honey over the top.
  12. Slice and serve warm or at room temperature, optionally with vanilla ice cream or whipped cream.

Notes

Use cold butter and minimal handling for a flaky crust. Chill dough well before rolling. Tent crust edges with foil if browning too quickly. Peeling peaches is recommended for smoother texture. Honey drizzle adds a subtle floral sweetness and should not be skipped. For vegan or gluten-free versions, substitute ingredients accordingly.
