  • Coarse sea salt or kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon olive oil or neutral oil (optional)

Instructions

  1. Bring the steak to room temperature (about 20-30 minutes) to ensure even cooking.
  2. Preheat your grill to around 450°F (232°C) for direct heat. If using charcoal, wait until coals are covered in gray ash.
  3. Pat the steak dry with paper towels, then rub both sides generously with coarse salt and freshly ground black pepper. Drizzle and rub in the oil if using.
  4. Set up two grilling zones: one side on high heat for searing, the other on low heat for finishing (indirect heat).
  5. Sear the steak on the hot side for 2-3 minutes per side until a golden-brown crust forms. Do not move the steak around during searing.
  6. Move the steak to the cooler side of the grill, close the lid, and cook for another 4-6 minutes depending on thickness and desired doneness. Use a meat thermometer to check: 130°F (54°C) for medium-rare, 140°F (60°C) for medium.
  7. Remove the steak from the grill, tent loosely with foil, and let rest for 5-10 minutes to redistribute juices.
  8. Slice against the grain and serve with your favorite sides.

Notes

Let the steak rest after grilling to keep it juicy. Use high heat for searing to develop a crust. Avoid flipping too often to ensure good browning. Clean and oil the grill grate before cooking to prevent sticking. If grill heat is insufficient, finish steak in a hot pan after searing. Optional to skip oil for gluten-free or oil-free preference.
