A quick and easy recipe for homemade strawberry fruit leather roll-ups that are chewy, tangy, and naturally sweet. Perfect for healthy snacking and suitable for vegan and gluten-free diets.

  • 2 cups fresh strawberries (about 300 grams), rinsed and hulled
  • 2 tablespoons honey or maple syrup (maple syrup for vegan option)
  • 1 tablespoon fresh lemon juice
  • Optional: 1/4 teaspoon ground cinnamon

Instructions

  1. Rinse, hull, and pat dry about 2 cups (300 grams) of fresh strawberries. If using frozen, thaw and drain well to reduce excess moisture. (5 minutes)
  2. Add strawberries, 2 tablespoons of honey or maple syrup, 1 tablespoon fresh lemon juice, and optional 1/4 teaspoon cinnamon into your blender or food processor. Blend until completely smooth. The mixture should be thick but spreadable. (3-4 minutes)
  3. Preheat oven to its lowest temperature setting (typically between 140°F and 170°F). Use convection setting if available for more even drying. (5 minutes)
  4. Line a rimmed baking sheet with parchment paper or a silicone mat. Pour the fruit puree onto the sheet and spread evenly with an offset spatula or the back of a spoon to about 1/8 inch (3 mm) thickness. (5 minutes)
  5. Place the baking sheet in the oven. Dry for 4-6 hours, checking occasionally after 4 hours. The fruit leather is done when it’s no longer sticky to the touch and peels away easily from the parchment. (4-6 hours)
  6. Remove from oven and let cool completely. Use scissors or a sharp knife to cut into strips about 1-2 inches wide. Optionally, roll up each strip in parchment paper for easy storage and snacking. (10 minutes)

Notes

Use an offset spatula to spread puree evenly for consistent drying. Keep oven temperature low to preserve fresh flavor. Rotate baking sheet halfway through drying if oven has hot spots. Store roll-ups in airtight containers at room temperature for up to 2 weeks, refrigerate for up to 1 month, or freeze for 3 months. If fruit leather is sticky after drying, dry for an additional 30 minutes.
