  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 700g)
  • ½ cup BBQ sauce (120 ml)
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon salt (5 g)

Instructions

  1. Rinse the chicken thighs and pat dry with paper towels. Place them in a mixing bowl. Drizzle olive oil and sprinkle salt evenly over each piece. Toss gently to coat all sides.
  2. Preheat the grill to medium-high heat, about 375–400°F (190–204°C). If using charcoal, wait until coals are covered in white ash.
  3. Place the chicken thighs skin-side down on the grill. Leave them undisturbed for about 5 minutes to develop a crust. Flip and grill the other side for another 5 minutes.
  4. Brush a generous layer of BBQ sauce on the chicken, then flip and brush the other side. Close the grill lid and cook for another 5–7 minutes, flipping and basting once more if desired.
  5. Check for doneness using a meat thermometer (165°F / 74°C) or pierce the thickest part to ensure juices run clear. Remove from grill and let rest for 5 minutes before serving.

Notes

Oil the grill grates or the chicken well to prevent sticking. Apply BBQ sauce only during the last 5–10 minutes to avoid burning the sugars. Let the chicken rest after grilling to lock in moisture. Boneless chicken breasts can be used but require shorter cooking time (6–8 minutes per side).
