  • 20 cherry tomatoes, halved
  • 20 fresh mozzarella balls (bocconcini or ciliegine size)
  • Fresh basil leaves (small to medium size, washed and patted dry)
  • 1 tablespoon extra virgin olive oil (for drizzling)
  • Balsamic glaze or reduction (optional)
  • Salt and freshly ground black pepper (to taste)
  • Wooden skewers or toothpicks (short size preferred)
  • 1 cup mixed nuts (almonds, cashews, pecans; raw or roasted unsalted)
  • 2 tablespoons honey (preferably local raw honey)
  • ยฝ teaspoon ground cinnamon
  • A pinch of sea salt
  • ยฝ teaspoon vanilla extract (optional)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine 1 cup mixed nuts with 2 tablespoons honey, ยฝ teaspoon ground cinnamon, a pinch of sea salt, and ยฝ teaspoon vanilla extract if using. Stir until nuts are evenly coated.
  3. Spread the coated nuts evenly on the baking sheet. Bake for 10-12 minutes, stirring halfway through, until golden and fragrant. Let cool completely; theyโ€™ll crisp up as they cool.
  4. While nuts cool, halve 20 cherry tomatoes and drain 20 fresh mozzarella balls.
  5. On each skewer, thread one half of a cherry tomato, a basil leaf (folded if large), and a mozzarella ball. Repeat until all ingredients are used.
  6. Arrange skewers on a serving plate or directly into your bento box. Drizzle lightly with 1 tablespoon extra virgin olive oil and season with salt and pepper.
  7. Optional: Drizzle balsamic glaze over the skewers just before serving or packing.
  8. Place the mini caprese skewers in one compartment and honey nut bites in another. Add fresh fruit or crackers if desired.
  9. Cover and refrigerate if making ahead. Skewers keep well for up to 24 hours; nuts can be stored airtight for several days.
