These easy make-ahead turkey pinwheels are the ultimate lunch solution, featuring a creamy ranch filling, tender turkey, and fresh veggies all rolled up in a soft tortilla. Perfect for meal prep, parties, or saving you from a sad desk lunch.

Ingredients

Scale
  • 8 oz cream cheese, softened to room temperature
  • 1/4 cup sour cream
  • 1 packet ranch seasoning mix (or 2 tablespoons homemade ranch seasoning)
  • 1/2 cup shredded cheddar cheese (sharp preferred)
  • 1/4 cup finely chopped green onions (white and green parts)
  • 1/4 cup finely chopped red bell pepper
  • 4 large flour tortillas (10-inch, burrito size)
  • 12 slices deli turkey breast (about 1/2 pound)
  • 4 slices provolone cheese (or Swiss, mozzarella, or pepper jack)
  • 1 cup fresh spinach leaves (optional)
  • 1/4 cup sun-dried tomatoes, drained and chopped (optional)

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge at least 30 minutes before starting. If forgotten, microwave in 10-second bursts until soft but not melted (texture of thick yogurt).
  2. Make the filling: In a medium mixing bowl, combine softened cream cheese, sour cream, and ranch seasoning mix. Beat with a hand mixer on medium speed until smooth and fluffy, about 1 minute. Fold in shredded cheddar, green onions, and red bell pepper until evenly distributed.
  3. Prep your workspace: Lay a large flour tortilla flat on a cutting board. If tortillas are cold, microwave for 10 seconds to make more pliable.
  4. Spread the filling: Using an offset spatula or butter knife, spread about 3 tablespoons of cream cheese mixture evenly over the entire surface of the tortilla, going all the way to the edges.
  5. Layer the ingredients: Place 3 slices of turkey flat on the cream cheese mixture, overlapping slightly to cover the entire surface. Add 1 slice of provolone cheese on top. If using spinach, lay a small handful of leaves evenly across the cheese. Sprinkle a few chopped sun-dried tomatoes if using.
  6. Roll it tight: Start at one edge and roll the tortilla as tightly as possible without tearing. Use fingers to tuck and pull as you go. If the tortilla bulges in the middle, gently press it down as you roll.
  7. Wrap and chill: Place the rolled tortilla seam-side down on a piece of plastic wrap. Wrap tightly, twisting the ends like a candy wrapper. Repeat with remaining tortillas. Place all wrapped rolls on a baking sheet or large plate and refrigerate for at least 1 hour (overnight is better).
  8. Slice and serve: When ready to eat, unwrap one roll at a time. Using a sharp chef’s knife, slice the roll into 1-inch pieces using a gentle sawing motion. Trim messy ends if desired.

Notes

Let cream cheese soften to room temperature for best spreadability. Chill rolled pinwheels for at least 1 hour before slicing to ensure clean cuts. Pat dry any wet ingredients like spinach or sun-dried tomatoes to prevent sogginess. Use a sharp knife with a gentle sawing motion for perfect spirals. These taste even better the next day as flavors meld together.
